Quick gnocchi pan

Ingredients for 2 servings:

  • 500 g gnocchi
  • 2 stalk(s) leeks
  • 1 bunch of carrots
  • 300 ml vegetable broth, strong
  • 500 g crème fraîche
  • n. B. Pfeffer
  • Oil or butter for frying

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Pre-cook the gnocchi in boiling water until they rise to the surface. Then drain through a sieve. In the meantime, wash and slice the leek and carrots. Heat a splash of oil in a large pan and briefly fry the leek and carrot slices. Add the vegetable stock and simmer for a few minutes until the vegetables reach the desired consistency. Then fold in the crème fraîche and season with pepper. Add the cooked gnocchi and stir. If desired, thicken the liquid with a little sauce thickener or flour until it is creamy. Serve with bratwurst, smoked pork, or turkey schnitzel. Tip: Or simply enjoy on its own as a vegetarian main course.
