Ingredients for 4 servings:
- 1 kg gnocchi
- 1 onion(s)
- 1 garlic clove(s)
- 3 bell peppers of your choice
- 400 g broccoli
- 1 can coconut milk
- 300 g Greek yogurt
- 100 ml cream
- 1 tsp curry paste, red
- 1 tsp curry powder
- 1 tsp paprika powder
- 2 tbsp tomato paste
- e.g. salt and pepper
- n. B. Oil
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes
Cook the gnocchi according to the package instructions. Dice the onion, garlic, and bell pepper. Separate the broccoli into florets. Sauté the onion, garlic, and bell pepper in a pan with a little oil and add the broccoli florets. Add the coconut milk, yogurt, cream, tomato paste, and curry paste and bring to a boil. Season with curry powder, paprika, salt, and pepper to taste. Simmer on low heat for about five minutes. Add the gnocchi and mix well.
