Quick gourmet pasta with Parma ham ricotta and aromatic cherry tomatoes

Ingredients for 4 servings:

  • 400g penne
  • 250 g ricotta
  • 100 g Parma ham
  • 400 g cherry tomatoes, ripe
  • 10 leaves of fresh basil
  • 50 g Parmesan, coarsely grated
  • 3 tbsp olive oil
  • 2 cloves garlic
  • Salt
  • Pepper, black, fresh, ground

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

Preheat oven to 180°C fan/convection oven. Wash the tomatoes, score them lightly to absorb the flavor, and place them in a large ovenproof dish so they lie side by side. Peel the garlic, chop it finely, and scatter it over the tomatoes. Drizzle olive oil over the tomatoes and season well with salt and pepper. Cook the tomatoes in the preheated oven for about 20-25 minutes. If necessary, add the grill for the last few minutes. Cook the pasta al dente in salted water according to the package instructions. While the pasta and tomatoes are cooking, season the ricotta with pepper. Chop the Parma ham and mix it with the ricotta. Wash the basil, tear it into small pieces, and set aside. Grate the Parmesan and set aside. Mix the ricotta with the cooked pasta and serve on plates. Arrange the deliciously fragrant cherry tomatoes, basil, and Parmesan on top. Finish with a little freshly ground black pepper. This completes the dish.
