Quick kale soup with mustard

Ingredients for 4 servings:

  • 750 g kale
  • ½ celeriac
  • 3 carrots
  • ½ liter meat broth
  • 4 sausages (Mettwurst)
  • 1 cup of cream
  • 1 tbsp mustard, hot
  • 2 onions

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Peel and finely dice the onion, carrots, and celery. Sauté in a pan with a little oil. Pour in the broth and simmer for about 5 minutes. Cut the kale into bite-sized pieces or strips and add. The sausages can also be added at this point. When the kale has softened, pour in the cream and add the mustard. Season with salt and pepper, adding more mustard if desired. The quantities may be a bit inaccurate, as I usually cook the recipe by feel. But it tastes delicious and is quick to prepare. Great for cold days, and I also find it a bit “delicate.”
