Quick lamb's lettuce with arugula, strawberries, lightly gratinated feta and apple balsamic

Ingredients for 2 servings:

  • 300 g lamb’s lettuce and rocket, mixed
  • 200 g strawberries
  • 1 bell pepper(s), red
  • 150 g feta cheese
  • 3 tbsp olive oil, good
  • 3 tbsp apple balsamic vinegar, preferably with max. 4% acidity, or very mild apple cider vinegar
  • 2 tbsp honey

Wash the lamb’s lettuce and arugula, tearing it into small pieces if necessary, and place it in a large salad bowl. Chop the strawberries and bell peppers and add them to the salad bowl. Mix well. Cut the feta into small pieces and drizzle with the honey. To make things easier, I microwave the honey-coated feta for about 30-40 seconds at 800 watts. You can also briefly gratinate the feta cheese in the oven at about 180°C for about 10-15 minutes. Add the melted or very soft feta while it’s still warm to the salad bowl with the other ingredients and mix everything together. The cheese will completely melt when mixed with the other ingredients, dispersing its flavor perfectly throughout the salad. Add the olive oil and apple balsamic vinegar and mix well again. It’s a wonderful summer salad that looks great and is quick to prepare.
