Quick leek cream soup with bacon

Ingredients for 4 servings:

  • 2 stalk(s) leeks
  • 100 g bacon, diced, fat
  • 750 ml meat broth
  • 250 ml milk
  • 3 tbsp mashed potato powder
  • some sweet cream
  • Pepper, white
  • Salt
  • possibly nutmeg

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

surprisingly simple and delicious

Trim and slice the leeks. Fry the bacon cubes in a large pot until crispy, then remove. Sauté the leek rings in the bacon fat. Deglaze with the meat broth and simmer for about 10 minutes. Then stir in the milk and mashed potato powder and return to the heat. Season with a little cream, salt, and pepper. If desired, add a pinch of nutmeg. Sprinkle the bacon cubes over each serving before serving.
