Ingredients for 2 servings:

  • 750 g wheat flour, type 1600
  • 500 g rye flour, type 960
  • 1 pack of yeast
  • 2 tbsp bread spice mix
  • 1 tbsp caraway seeds, whole
  • 30 g salt
  • 900 ml water

Instructions

Working time approx. 15 minutes; Rest time approx. 40 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 55 minutes

quick mixed bread with yeast

Mix the dry ingredients together and crumble in the yeast. Knead the dough with the water in a food processor for 10 minutes, adding the water gradually. Let the dough rise for 30 minutes. Then, punch it down again by hand and form two loaves. Place them on baking sheets and let it rise again. Meanwhile, preheat the oven. Score the loaves and sprinkle with water. Bake: 250°C for 10 minutes, 180°C for 50 minutes. While the dough is baking, steam well, then release the steam and reduce the heat to 180°C.
