Quick minced meat, vegetables and rice dish

Ingredients for 2 servings:

  • 1 cup of rice (250 ml)
  • 1 pack of minced meat, vegetarian or vegan
  • 1 onion(s)
  • 2 tomatoes
  • 1 small bunch of spring onions
  • 1 bell pepper(s), orange
  • 1 can of corn
  • some oil
  • some paprika powder
  • some turmeric
  • some herbal salt

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

vegetarian

Cook the rice in salted water according to the package instructions. Peel the onion, chop the spring onions and bell pepper, and rinse them. Sauté the onion in a little oil in a pan, add the veggie mince, and cook according to the package instructions. Add the spring onions and bell pepper pieces to the pan and cook gently. To prevent burning and to prevent the mixture from becoming too dry, add either more oil or water to the pan. In the meantime, chop the two tomatoes. Finally, add the corn and tomatoes to the pan. Season with paprika, turmeric, and herb salt to taste. The rice is now ready. Add the rice to the pan and mix well. Season to taste and add more seasoning if desired.
