Ingredients for 1 servings:

  • 1 onion(s)
  • 2 sprigs of parsley
  • 150 g mushrooms
  • 1 green pepper
  • 1 tomato(s)
  • 1 tbsp rapeseed oil
  • 2 eggs
  • 1 pinch(s) of salt and pepper
  • 1 slice(s) wholemeal bread

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 8 minutes; Total time approx. 18 minutes

Peel the onion, wash the parsley, mushrooms, bell pepper, and tomato, and chop everything finely. Heat the oil in a pan and sauté the vegetables for 5 minutes. Meanwhile, crack the eggs, whisk them, season with salt and pepper, and let them set in the pan. Serve with parsley and toasted bread.
