Quick mushroom sauce

Ingredients for 2 servings:

  • 1 small onion(s)
  • 250 g mushrooms, fresh, dark
  • 2 tbsp, leveled flour
  • 300 ml milk
  • 1 tsp vegetable broth
  • Paprika powder, sweet
  • Parsley, chopped
  • some clarified butter

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

a simple mushroom sauce – great with spaetzle, dumplings, noodles, but also with meat

Peel and finely dice the onion. Clean and quarter the mushrooms. Melt the clarified butter in a pan, add the onions, and sauté until translucent. Add the mushrooms and fry. Dust with flour, stir, and deglaze with the milk. Season with vegetable stock and paprika. Simmer the sauce until reduced to the desired consistency. Season to taste with salt, pepper, paprika, and chopped parsley. This sauce goes perfectly with spaetzle and is ready in the time it takes the spaetzle to cook.
