Quick noodle soup

Ingredients for 4 servings:

  • some oil
  • 2 small onions
  • 5 large carrots
  • 1 half celery
  • 1.7 liters of vegetable broth
  • 300 g pasta
  • 2 paprika sausages
  • Parsley

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Simple and fast

Finely chop the onions. Dice the carrots and celery. Heat a little oil in a large pot. Lightly fry the onions, carrots, and celery. Add the vegetable stock and let it simmer. Add the pasta and cook until tender. I always use farfalle, but you can also use other pasta, such as pasta shells or tagliatelle. In a separate pan, fry the paprika sausages. Add the sausages to the soup and sprinkle with parsley. If desired, you can add a little more vegetable stock, as the pasta absorbs a lot of liquid.
