Quick One-Pan Rice

Ingredients for 4 servings:

  • 2 garlic cloves
  • 1 small onion(s)
  • 200 g broccoli
  • 200 g carrot(s)
  • 150 g bell pepper(s), red
  • 100 g peas, frozen
  • 500 ml water
  • 150 g rice
  • 2 tbsp soy sauce
  • 1 tbsp parsley, shredded
  • 30 g tomato paste
  • 3 tsp sweet paprika powder
  • 2 tsp ginger powder
  • 2 tsp coriander powder
  • 1 tsp chili flakes, optional
  • 1 tsp salt

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

Mix the spices, tomato paste, and soy sauce to form a seasoning paste. Slice the bell pepper into 3 mm thick strips. Cut the carrots into 2 mm thick slices each. Finely chop the onions and garlic. Fry the onions and garlic in a large pan until translucent. Then fry the bell peppers and carrots for 5 minutes. After 5 minutes, add the broccoli and cook for another 4 minutes. When the time is up, add the raw rice and seasoning paste to the pan and let it toast briefly for 1 minute. Then deglaze everything with 500 ml of water and bring to a boil. Once the dish has boiled, reduce the heat to allow the dish to simmer for 15 minutes. Add the peas 3 minutes before the end of the 15 minutes and let it cook. The dish should be ready after 15 minutes, when the rice is tender. Season to taste with salt and pepper.
