Quick pickled cucumbers

Ingredients for 6 servings:

  • 1 kg cucumber(s), green
  • 2 tsp salt
  • 3 tbsp sugar
  • 6 tbsp vinegar (apple cider vinegar)
  • 2 onions
  • 4 tbsp mustard seeds
  • 1 tsp pepper, coarse

Instructions

Working time approx. 20 minutes; Rest period approx. 2 days; Total time approx. 2 days 20 minutes

Peel, deseed, and slice the cucumbers. Mix with the remaining ingredients and let it marinate for at least two days. It’s great as a low-calorie snack or as a side dish.
