Quick potato and cabanossi pan with herbs and spring onions

Ingredients for 1 servings:

  • 250 g potatoes, boiled, from the previous day
  • 100 g Cabanossi
  • e.g. margarine or germ oil
  • 1 rosemary sprig(s)
  • 1 sprig of oregano
  • 1 spring onion(s), cleaned, 25 g
  • Herb salt and pepper, white

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 35 minutes

Cut the potatoes into cubes, the Cabanossi into slices, and then halve them. Cut the spring onions into 0.5 cm wide rings and the herb sprigs into 2-3 cm long pieces. Heat margarine or oil in a pan. Add the potato cubes and herbs and fry for about 10-15 minutes until golden brown. Season with pepper and a little herb salt. Add the Cabanossi and spring onions to the pan. Fry for another 5-10 minutes, turning occasionally. Remove the herb sprigs and season the potato and Cabanossi pan to taste, adding more seasoning if desired. It also tastes wonderful with scrambled eggs and peas.
