Quick potato dressing from the microwave

Ingredients for 4 servings:

  • 3 small potatoes
  • 1 ½ tsp, heaped vegetable stock
  • some water
  • 1 tbsp olive oil
  • 2 tbsp Balsamic vinegar bianco
  • e.g. chives
  • salt and pepper
  • nutmeg
  • Mustard

Instructions

Working time approx. 10 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 25 minutes

simple, quick, vegetarian

Cut the potatoes into small cubes and place them in a microwave-safe bowl. Add the broth and water until the potato cubes are covered. Microwave the mixture at approximately 550 watts for 5-8 minutes (depending on the amount). Place a small plate underneath to catch any spillage. Stir occasionally. Mash the cooked potatoes a little with a fork. Add the vinegar and oil, season the dressing with the spices, and add a little more water if the mixture becomes too thick. Cover and let cool in the refrigerator. Mix with lamb’s lettuce, for example.
