Quick potato salad

Ingredients for 4 servings:

  • 1 kg potatoes
  • 1 bunch of radishes
  • 1 apple (Boskop)
  • 1 m.-sized onion(s)
  • 1 tbsp vegetable stock powder
  • 100 ml mineral water, hot
  • 2 tsp olive oil
  • salt and pepper
  • ½ pack of Italian herbs, frozen

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 55 minutes

ideal for on the go, as it doesn’t contain mayo

Boil the potatoes in salted water, peel, and cut into small cubes. Wash and slice the radishes. Chop the apple and onion accordingly and fry. Combine the ingredients. Dissolve the vegetable stock powder in hot mineral water, mix with olive oil, and season with salt and pepper. Pour the mixture over the potatoes and then sprinkle with the herbs.
