Quick pumpkin soup

Ingredients for 4 servings:

  • 1 onion(s)
  • 1 pumpkin(s), Hokkaido
  • 6 potatoes
  • 4 carrots
  • 700 ml water
  • 1 tsp vegetable broth, instant
  • 4 sausages, Vienna

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

Peel and dice the onion, peel and finely chop the carrots and potatoes. Deseed and finely chop the pumpkin. Sauté the diced onion, add the pumpkin, potatoes, and carrots, and fry briefly. Add enough water to cover the vegetables. Add a teaspoon of vegetable stock. Simmer for about 20 minutes, then puree. Chop the sausages and heat them in the soup.
