Ingredients for 4 servings:
- 320 g flour
- 1 tsp salt
- 180 g margarine
- 200 g goat cheese
- 250 g cherry tomatoes
- 3 eggs
- 200 ml milk
- 1 cup crème fraîche
- 4 basil leaves
- a little nutmeg
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes
Melt the margarine slightly in the microwave, then quickly knead it with 1/2 tbsp of salt, the flour, and a few finely chopped basil leaves to form a smooth dough. Roll out the dough in a round quiche dish or springform pan and pull the edges up at least 2 cm on the sides. Finely slice or grate the goat cheese and spread about half of it on the dough. Arrange the cherry tomatoes on top, halved or quartered depending on their size. Mix the eggs with the milk and crème fraîche, season with the remaining salt and nutmeg to taste. Mix well and pour over the cheese and tomatoes. Sprinkle with the remaining grated cheese. Bake in the oven at 180°C for about 30 minutes. We like to eat it as a side dish with a schnitzel or steak, but it can also be eaten as a meatless meal.
