Tomato and goat cheese tart

Ingredients for 4 servings:

  • 1 pack of puff pastry, fresh or frozen
  • 4 m.-sized tomatoes
  • 1 cheese (goat cheese roll)
  • 4 sprigs rosemary
  • salt and pepper
  • Oregano, dried
  • 1 pinch(s) of sugar

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Preheat the oven to 200°C (top/bottom heat). Thaw the puff pastry if necessary and roll it out. Then, using a cereal bowl or a small plate, cut out 3-4 circles from the puff pastry. If the puff pastry doesn’t have enough space, you can roll it out a little thinner with a rolling pin to create more surface area. Slice the tomatoes and the goat cheese roll. Place the puff pastry circles on a baking sheet lined with baking paper. Now alternate the tomato and cheese slices in a circle on the puff pastry, leaving a 1 cm border on the outside. Season with pepper, salt, a little sugar, and oregano. Place a rosemary sprig on each tart. Bake in the oven for 15 minutes. Serve hot! Tastes delicious as an appetizer or snack. It’s best not to eat the rosemary sprig, but you can pluck the small leaves/twigs from the stem and eat them.
