Quick sauerkraut soup

Ingredients for 4 servings:

  • 500 g minced meat, mixed
  • 1 onion(s), diced
  • 1 liter vegetable broth
  • 500 g sauerkraut (wine sauerkraut), mild
  • 500 g tomatoes, pureed
  • 80 g tomato paste
  • Salt or broth
  • pepper
  • Cayenne pepper
  • n. B. Paprika powder, sweet
  • e.g. crème fraîche
  • Oil for frying

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Brown the minced meat and diced onion in a large pot with a little hot oil, then pour in the vegetable stock. Drain the sauerkraut and chop or finely chop it. Add it to the soup along with the passata and tomato paste. Bring the soup to a boil and season with salt or stock powder and the remaining spices, if desired. Then ladle into deep bowls and add a dollop of crème fraîche to the center, if desired. Tip: The soup tastes best when reheated.
