Quick spelt yeast bread

Ingredients for 2 servings:

  • 800 g spelt flour, finely ground
  • 300 g wheat flour, finely ground
  • 100 g buckwheat flour, finely ground
  • 4 tsp salt (approx. 30-40 g)
  • 1 liter of warm water
  • 5 tbsp fruit vinegar
  • 1 cube of yeast (or equivalent dry yeast)
  • 160 g walnuts
  • 160 g sunflower seeds (possibly some for garnish)

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Dissolve the yeast in the warm water and add the vinegar. Gradually add the flour mixed with the salt, the walnuts (roughly crushed with the ball of your hand), and the sunflower seeds. Mix thoroughly with a dough hook, then work the dough thoroughly. Pour the mixture into two well-greased loaf pans and smooth the surface with a wet spatula. If desired, create a pattern with sunflower seeds. Cover the dough and let it rise for about 30 minutes. Bake in a preheated oven at 220°C (425°F) for about 45 minutes. The baking time will, of course, depend on the oven.
