Quick sweet potato spread

Ingredients for 2 servings:

  • 3 m.-sized sweet potatoes
  • 250 g yogurt
  • 2 tbsp oil
  • salt and pepper
  • e.g. parsley
  • 1 dash of lemon juice, optional

Instructions

Working time approx. 10 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 55 minutes

Peel the sweet potatoes, cut them into small cubes, and boil them in a little water for about 15 minutes, until tender (pre-cooked oven potatoes work too! Use up leftovers). Let the cooked potatoes cool, then place them in a bowl with the yogurt and oil and puree (alternatively, place them in the Thermomix and blend vigorously once). Season to taste with salt and pepper. Finely chop the parsley and fold it in if desired. If you like, you can add a dash of lemon juice for a summery touch.
