Quick tomato cream soup made from fresh tomatoes

Ingredients for 1 servings:

  • 1 small onion(s)
  • 1 clove(s) garlic
  • 3 large tomatoes, approx. 450 g
  • some oil for frying, if you like olive oil
  • 1 tsp basil, dried
  • 1 tsp oregano, dried
  • 100 g light cream or similar
  • 1 tbsp tomato paste
  • pepper
  • Salt
  • Paprika powder, hot
  • a little balsamic vinegar

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Peel and roughly dice the onion and garlic. Peel/skin the tomatoes and roughly dice them. Heat the oil and sauté the onion and garlic. When the onions are translucent, add the tomatoes and simmer for about 5 minutes, stirring occasionally. Blend with the light cream, tomato paste, and herbs. Bring to a boil and season with salt, pepper, paprika, and a little balsamic vinegar. If you prefer a thinner soup, you can add water or milk/cream. Tip: Fresh herbs can also be used.
