Quick tomato soup

Ingredients for 2 servings:

  • 1 large onion(s)
  • 1 garlic clove(s)
  • 2 tsp oil
  • 1 large can of tomatoes, peeled
  • 2 balls of mozzarella
  • a few stalks of basil
  • oregano
  • salt and pepper

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

with mozzarella

Heat the oil with the finely diced onions and garlic. Add the canned tomatoes and bring to a boil. Season with pepper, salt, and oregano (you can add a little more spice if you like). Simmer for 5 minutes. Then puree the soup with a hand blender. Cut the mozzarella into small pieces and add to the soup. Garnish with a few basil leaves and serve.
