Zucchini strudel

Ingredients for 4 servings:

  • 2 packs of puff pastry
  • 1 kg zucchini
  • 200 g diced ham (turkey ham)
  • 200 g cheese, grated (pizza cheese or mozzarella, low-fat)
  • 1 onion(s)
  • 2 eggs
  • salt and pepper
  • Parmesan, freshly grated
  • oregano

Finely chop the onion, dice the zucchini and ham, fry the onions in a pan, add the zucchini, fry for about 10 minutes, add the ham and fry for about 5 minutes, stir in 2 eggs, then stir in the cheese, season with pepper, salt, and oregano, and simmer for about 5 minutes until the cheese has melted. Let cool. Place the puff pastry on top, spread the mixture evenly between both sheets, and roll up. Brush the puff pastry with egg and sprinkle with grated Parmesan cheese. Bake in a preheated oven at 180°C (350°F) for about 30 minutes (baking time depends on the oven; fan oven takes about 30 minutes, conventional oven 15 minutes longer). Serve with tzatziki.
