The quince is known to most, but rarely found in the local fruit basket. Therefore, if you are eating a quince for the first time, you may be wondering what to look out for. We tell you whether you can eat quince raw, why the fruit is so healthy and some delicious recipes.
Eat quinces: How to make quince jelly yourself
It is not advisable to eat the quince in its raw state. Our local quince variety is non-toxic, but it tastes very bitter raw and is therefore not edible. We’ll show you some delicious recipes instead.
- What you need: 5 kilos of quinces, 2 packets (500 grams) of preserving sugar, a tea towel, two cheesecloths , two saucepans, two kitchen sieves.
- Use the kitchen towel to rub the quinces. This will remove the fruit’s light hairs. Then use a knife to cut the quince into small pieces and remove the core.
- Pour 2 liters of water into a large saucepan and add the quince. Bring the whole thing to a boil, cover the pot and let the fruit simmer for an hour.
- Dampen the cheesecloths with water and place one cloth at a time in a colander. Place the two sieves on each pot. Put the quinces and the liquid in the cheesecloth. Drain the quinces overnight.
- Squeeze the cheesecloths with the quinces thoroughly. Put 1800 milliliters of quince juice in a saucepan, bring to the boil and add the preserving sugar. Use according to the package insert.
- Fill the jelly into jam jars and keep them in a dark and cool place. The jelly is an ideal gift for family and friends.
How to bake quince cakes
The quince cake is not only delicious, but also absolutely guaranteed to succeed. We will briefly explain what you should consider when preparing it.
- What you need: 2 kilos of quinces, 265 milliliters of milk, 260 grams of butter, 520 grams of flour, 290 grams of sugar, 1 cube of yeast, salt, 1 egg (large), 7 tablespoons of lemon juice, some oil for the pan, baking tray (20×30 )
- Melt 80 grams of butter in a pan. Then pour in the milk and dissolve the yeast cube in this mixture.
- Put the flour in a bowl with 90 grams of sugar and a pinch of salt and add the yeast-milk mixture and one egg. Knead all the ingredients together until you get a homogeneous dough.
- Cover the dough and let it rise in a warm place for three hours.
- Wash the quince in lukewarm water, remove the core and cut into 2 cm thick slices. Place the quinces, 7 tablespoons lemon juice, 120 grams sugar and 420 milliliters water in a large saucepan and bring the mixture to a boil.
- Cover the pot and let the quinces simmer for 30 minutes, stirring occasionally. Knead the yeast dough thoroughly again and place it on the baking sheet. Pinch it in the corners. Let the dough rise for another 50 minutes.
- Using a spoon, make indentations in the dough and place 180g of butter in them. Distribute the quinces evenly over the dough and sprinkle with 80 grams of sugar.
- Bake the cake at 170 degrees top and bottom heat for 20 to 25 minutes. The cake should be golden brown.
Quince liqueur made easily by yourself
A delicious liqueur is always a hit in the fall season and makes the perfect gift for friends and family. To ensure that your DIY liqueur is guaranteed to succeed, we explain how you should proceed.
- What you need: 800 grams of quinces, 350 grams of rock candy, 1 liter of vodka, one organic lemon, one organic orange, one cinnamon stick, one clove, 2 tablespoons of aniseed, large mason jar.
- Use the kitchen towel to rub the quinces. This will remove the fruit’s light hairs. Then use a knife to cut the quince into small pieces and remove the core.
- Rinse the lemon and orange with hot water and cut into small pieces. Put all the ingredients in the mason jar. Close it well and leave the liqueur in a dark, cool place for 10 weeks.
- When the liqueur is well infused, you can bottle it and give it away to friends and family.

- Vitamin C: The quince is a real vitamin C bomb. This supports the body in the production of collagen. Collagen is needed to build connective tissue. Vitamin C also has an antioxidant effect. This effect protects the body from harmful substances such as free radicals.
- Free radicals can be caused by external influences such as UV rays and smog or as a by-product of metabolic processes. These promote a wide variety of diseases.
- Fiber: Quinces are high in fiber. These stimulate digestion and have a positive effect on the intestinal flora. They are a real insider tip when it comes to constipation.
- A high-fiber diet prevents diseases such as type 2 diabetes, heart attacks, strokes, obesity, high blood pressure and colon cancer. An adult should consume around 30 grams of fiber per day.
- Tip: If you don’t want to eat the quince, you can simply drink the quince juice to benefit from its healthy properties. Drink a glass of quince juice every morning.
- External use: Quinces are not only suitable for internal use, they can also work wonders when used externally. The slime of the quince has a disinfecting and anti-inflammatory effect. For this reason, it can provide relief from inflammation in the form of gel.
- Boil the quince seeds until they have a slimy consistency. Allow the slime to cool and place in a clean jar. Apply the gel to the affected area twice a day.
