Quince soup

Ingredients for 4 servings:

  • 4 quinces
  • 1 dl white wine
  • 1 dl water
  • 150 g sugar
  • ½ stalk(s) cinnamon
  • 2 tbsp butter
  • 2 white rolls

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Clean and peel the quinces, and remove the cores. Cut the fruit into thin slices. Tie the cores into a spice bag. Bring the wine and water to a boil, then add the quinces, spice bag, sugar, and cinnamon. Cover and simmer over low heat until the quinces are tender but not falling apart. Cut the bread rolls into cubes and toast them in butter. Then serve over the soup in bowls.
