Ingredients for 4 servings:

  • 1 kg tomatoes
  • lemon juice
  • 2 lemons, grated peel, untreated
  • 1 kg gelling sugar, 1:1
  • possibly cinnamon

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Tomato jam

Wash, skin, and stem the tomatoes, chop them, and puree them in a blender. Combine with the lemon juice, grated zest, and preserving sugar and let it steep for 2-3 hours. Slowly bring to a boil while stirring. Boil gently for four minutes. Pour into clean jars and seal. Place the jars on their lids and let cool.
