Ingredients for 2 servings:
- 200g quinoa
- 2 bell peppers
- 1 m.-large zucchini
- 6 mushrooms
- 1 tbsp olive oil
- 1 tbsp Ajvar, hot
- 1 tbsp tomato paste
- salt and pepper
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes
Vegan, light lunch
Cook the quinoa according to the package instructions. Meanwhile, wash the vegetables and dice them very finely. Sauté the diced vegetables in olive oil in a pan for about 5-8 minutes. The vegetables should still have some bite. Once the quinoa is cooked, add it to the vegetables in the pan and mix well. Finally, add the ajvar and tomato paste, along with salt and pepper to taste. Mix well again. You can, of course, also add herbs or other vegetables.
