Ingredients for 4 servings:
- 1 cup quinoa, cooked
- 3 eggs
- 1 ball of mozzarella
- ½ bell pepper
- ¼ tsp salt
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes
Low-carb
Cut the mozzarella and bell peppers into small cubes. Mix all ingredients until smooth and fill either into greased mini muffin cups or form into balls and place on a baking sheet lined with parchment paper. Bake in a preheated oven (top/bottom heat) at 175°C for 25-30 minutes. Makes approximately 18 pizza balls. High in protein and low in carbs.
