Quinoa salad with tuna

Ingredients for 4 servings:

  • 100g quinoa
  • 1 bell pepper(s), red
  • 1 cucumber(s)
  • 1 can of tuna
  • 50 g cheese
  • 1 tbsp mustard
  • ½ lemon(s), the juice
  • Herbs
  • salt and pepper
  • olive oil
  • Mixed nuts

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Rinse the quinoa with hot water to remove any bitterness. Then cook for about 15-20 minutes. I like to use the microwave for this (cook on full power for 5 minutes, then reduce the wattage to 400W and let it swell). Then let it cool. Slice the peppers and cucumber, dice the cheese, and drain the tuna. Whisk the olive oil with lemon juice and mustard until smooth and season with spices. Combine everything in a large bowl and pour the dressing over the salad. Finally, top the salad with the nut mixture.
