Russian surimi salad

Ingredients for 4 servings:

  • 100 g basmati rice
  • ½ can corn
  • 200 g surimi sticks
  • ½ bunch of spring onions
  • 3 eggs
  • mayonnaise
  • Salt

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 10 minutes; Total time approx. 1 hour 30 minutes

Cook the rice and eggs, then let them cool slightly. Meanwhile, slice the spring onions into thin rings. Halve the surimi sticks lengthwise and dice. Peel and finely chop the cooled eggs. Then mix all ingredients together. Add salt to taste, add the mayonnaise, and serve cold.
