Quinoa tabbouleh with strawberries

Ingredients for 4 servings:

  • 500g quinoa
  • 2 tomatoes
  • ½ cucumber(s)
  • 10 strawberries
  • 1 small bunch of parsley
  • 1 small bunch of mint
  • ½ onion(s), red
  • 3 tbsp olive oil
  • 2 lemons
  • salt and pepper

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

Peel and finely chop the red onion. Wash the cucumber, tomatoes, and strawberries and cut each into small cubes (about 1 cm wide). Then wash and finely chop the parsley and mint. Prepare the quinoa according to the package instructions and let it cool. Then mix the quinoa with the tomatoes, cucumber, strawberries, onion, and herbs. Add olive oil and the lemon juice. Season with salt and pepper to taste.
