Quinoa with broccoli

Ingredients for 2 servings:

  • 125 g quinoa
  • 250 ml vegetable stock
  • 1 head of broccoli
  • 2 tomatoes
  • 1 shallot(s)
  • 20 g vegetables, e.g. celery and/or carrots, leeks, parsley root, cut into strips
  • 2 tbsp linseed oil
  • some olive oil
  • salt and pepper

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

simple and vegetarian

Steam the broccoli and tomatoes for about 20 minutes. Finely chop the shallot and sauté in a little olive oil in a heavy saucepan until translucent. Add the quinoa. Then add the vegetable stock and simmer for 15-20 minutes over low heat. Stir in the vegetable strips toward the end. When serving, season the vegetables with salt and pepper and drizzle the broccoli with flaxseed oil.
