Quinoa with sprouts

Ingredients for 2 servings:

  • 1 tbsp oil
  • 2 handfuls of sprouts (alfalfa)
  • 470 ml vegetable broth
  • 1 bell pepper(s), red
  • 150g quinoa
  • salt and pepper
  • 1 onion(s)

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Finely chop the onion and dice the bell pepper. Fry both in the oil for a few minutes. Add the quinoa, sauté briefly, and deglaze with the vegetable stock. Bring to a boil, then reduce heat to low until the quinoa is tender. Rinse the sprouts thoroughly, drain, and roughly chop. Mix into the quinoa and season with salt and pepper.
