Quinoa wraps, burritos or pancakes

Ingredients for 2 servings:

  • 185 g quinoa, white
  • 2 tbsp chia seeds
  • ½ tsp salt
  • 350 ml water
  • some oil for frying
  • optional spice(s) of your choice

Instructions

Working time approx. 10 minutes; Rest time approx. 3 hours 5 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 3 hours 25 minutes

Rinse the quinoa in a fine-mesh sieve under cold running water. Place it in a large bowl and just cover with water, ensuring the quinoa is completely submerged. Soak the quinoa for at least 3 hours. Drain and rinse again under cold water in a fine-mesh sieve to remove any residue. Combine all ingredients, including the optional seasonings, in a high-speed blender. Blend until smooth. Let the batter rest for about 5 minutes. Heat a non-stick skillet with the oil over medium heat. Using a spoon, spread the batter in a circular motion as thinly as possible without breaking it. Cook on one side for about 2-3 minutes. Flip and cook for another 1-2 minutes. Repeat with the remaining batter. Top with desired toppings.
