- Preheat the oven to (electric stove 200 ° C / convection 180 ° C / gas mark 3).
- Peel and cut the large white onion and large cloves of garlic. Wash the fresh sprig of thyme, pluck the leaves and chop a little with a knife. Roast the onion cubes in a little unsalted butter until golden, then add the finely chopped garlic and the chopped thyme leaves, roast everything briefly and set aside for further use.
- Soak the stale rolls in the lukewarm whole milk, squeeze them out well and then pass them through a sieve. Cut the fat, green bacon into small cubes that are as even as possible.
- Wash the medium-sized cucumbers or courgettes, dry them, cut them in half lengthways and scoop out with a small teaspoon. Season the cucumber and courgette halves inside and out with salt and black pepper.
- Mix the two types of minced meat with the breadcrumbs, the fresh egg, the freshly chopped parsley, the onion, the garlic cloves and the thyme leaves. Season to taste with salt and black pepper. Mix in the bacon cubes.
- Fill the cucumber and courgette halves with the minced meat mixture, place in a suitable frying pan or casserole dish and pour the tomato juice over them.
- Wash the ripe but firm tomatoes, cut into small pieces and add to the side in the pan or casserole dish. Cook everything in the preheated oven at (electric stove 200 ° C / convection 180 ° C / gas level 3) for about 30 minutes. When the minced meat is done, season the sauce with salt and black pepper.
