Minced Meat Rolls with Fried Potato Halves and Greek Farmer’s Salad

Ingredients
 

For the minced meat rolls:

  • 300 g Mixed minced meat
  • 1 Onion (approx. 50 g
  • 2 Sprigs of rosemary
  • 1 Bun
  • 1 Egg
  • 0,5 Red chilli pepper
  • 1 tsp Salt
  • 1 tsp Sambal oelek
  • 0,5 tsp Pepper
  • 4 tbsp Sunflower oil
  • 4 tbsp Breadcrumbs

For the potatoes:

  • 250 g Potatoes (8 pieces from the previous day / see recipe *)
  • 0,5 tsp Seasoning salt
  • 2 tsp Caraway seeds
  • 2 tsp Sesame

For the Greek farmer's salad: (For 4 people)

  • 1 Red pepper
  • 1 Green paprika
  • 1 Yellow pepper
  • 6 Bottle tomatoes (approx. 350 g)
  • 1 Small ice cream salad (approx. 150 g)
  • 1 Greek sheep cheese with herbs (150 g
  • 0,5 Pack of green olives without seeds, with herbs and chilli (150 g)
  • 0,5 Red chilli pepper
  • Pack of stuffed mini peppers
  • 3 tbsp Olive oil

For garnishing / serving:

  • 2 1/2 apricot
  • 2 Sprigs of rosemary
  • 2 A dollop of crème fraîche

Instructions
 

Minced meat rolls:

  • Peel the onion and dice very finely. Wash, strip and finely chop rosemary needles. Peat the chilli pepper, wash and dice very finely. Soak the rolls in water and squeeze them out well. Put all ingredients (minced meat, onion cubes, rosemary, rolls, egg, chilli pepper cubes, salt, pepper and sambal oelek) in a bowl, mix / knead well and leave to stand for approx. 30 minutes. Shape minced meat rolls with moistened hands, roll in breadcrumbs and fry in a pan with oil (4 tbsp) on all sides until golden-brown.

Fried potato halves:

  • Potatoes from the previous day (see recipe *): Peel off fish fingers with rosemary potatoes and beetroot salad), cut in half and fry in the minced meat pan until golden brown. Sprinkle with caraway seeds and sesame seeds and sprinkle with seasoned salt.

Greek farmer's salad:

  • Clean and wash the peppers and cut into small diamonds. Wash tomatoes, quarter them and cut into pieces. Clean the iceberg lettuce and tear it into pieces. Dice the sheep's cheese. Clean, wash and finely dice the chilli pepper. Quarter the olives. Cut the filled mini peppers into small pieces. Put all ingredients in a large bowl and mix with olive oil (3 tbsp).

Serve:

  • Serve the minced meat rolls with fried potato halves and Greek farmer's salad, garnished with ½ apricot + rosemary sprig and a dollop of crème fraîche.
