Rack of lamb with bean spice crust

Ingredients for 4 servings:

  • 2 racks of lamb (400 g each)
  • 1 can white beans (800 g)
  • 1 tsp, sautéed onion(s), freeze-dried
  • 1 tsp, sautéed garlic, freeze-dried
  • 1 pinch(s) thyme
  • 1 pinch of marjoram
  • 3 tbsp olive oil
  • Salt and pepper, black, freshly ground
  • 1 pinch of chili flakes

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour

Drain the beans and reserve the liquid. Purée 4 tablespoons of the beans with the garlic and onions. Season the remaining beans with salt, mix with the thyme and marjoram, and place in a baking dish. Add 4 tablespoons of the bean liquid and the olive oil to the beans and mix everything together. Preheat the oven to 200°C (400°F). Season the lamb racks with salt, pepper, and chili flakes and place them together so the bones are intertwined. Place them on top of the beans in the dish and spread the purée on top. Roast in the oven for about 40 minutes.
