Ingredients for 4 servings:
- 2 heads of radicchio
- 125 g smoked bacon
- 2 tbsp olive oil
- 2 tbsp balsamic vinegar
- Salt
- pepper
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 20 minutes
Harmonious combination of bitter and salty
Wash and trim the radicchio, and pat dry. Finely dice the bacon. Heat the oil in a pan and fry the bacon cubes. Once they are golden brown (just crispy), add the balsamic vinegar and stir well. Add the bacon sauce to the radicchio salad and mix well. Season with pepper and a little salt, if desired. Serve on a platter or in a shallow bowl. This salad goes well with grilled meat or fish. I love to sprinkle a few walnut pieces on top and/or—depending on the main course—a few slices of apple or pear on the side.
