Smokey's salsify sausage salad

Ingredients for 2 servings:

  • 500 g salsify
  • 100 g Landjäger or other dry sausage
  • 1 bunch of chives, cut into rolls
  • 2 tbsp vinegar
  • 1 tbsp rapeseed oil
  • 100 g yogurt
  • 1 clove(s) garlic, squeezed
  • 1 tsp mustard
  • 1 pinch(s) paprika powder
  • n. B. Pepper, from the mill
  • n. B. Salt

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Low-carb, SiS-compatible

Thoroughly scrub the salsify under running water, then peel, cut into approximately 5 cm long pieces, and cook in vinegar water for approximately 15 minutes until al dente. Drain, drain well, and let cool. Peel the Landjäger sausage and cut into thin slices. For the dressing, combine all ingredients and toss with the salsify and sausage. Stir in the chives before serving.
