Radicchio lamb's lettuce with roasted pine nuts and yogurt dressing

Ingredients for 2 servings:

  • 50 g lamb’s lettuce
  • 40 g radicchio
  • 20 g pine nuts
  • 100 g yogurt
  • 2 tbsp milk
  • 2 tbsp balsamic vinegar
  • 1 tbsp oil
  • 1 pinch(s) of sugar
  • 2 tbsp freshly chopped herbs
  • e.g. salt and pepper

Instructions

Working time approx. 12 minutes; Cooking/baking time approx. 3 minutes; Total time approx. 15 minutes

Clean and wash the lamb’s lettuce. Wash and cut the radicchio into thin strips. Lightly brown the pine nuts in a dry pan. Stir together the dressing and season to taste. Divide the lamb’s lettuce among plates or bowls, then top with the radicchio. Drizzle the dressing over the salad and sprinkle with the pine nuts.
