Dice the apple quarters very finely and drizzle with 1 to 2 tablespoons of lemon juice. In a bowl, combine the prepared ingredients with 1 to 2 tablespoons of rapeseed or sunflower oil. Season to taste with a little salt, a few grinds of mixed or black pepper, and a few chili flakes, if desired. This salad goes well with boiled potatoes with or without herring, toasted baguette, or grilled fish or steaks.
