Ingredients for 1 servings:

  • 90 g butter
  • 80 g sugar
  • 1 egg(s)
  • 100 g coconut milk
  • 1 tbsp vanilla extract
  • 30 g desiccated coconut
  • 150 g flour
  • 50 g almond(s), blanched, chopped
  • 12 almonds, whole kernels, peeled
  • 1 tsp baking powder
  • 10 balls/n confectionery (Raffaello)

Working time approx. 15 minutes; Cooking/baking time approx. 12 minutes; Total time approx. 27 minutes

Chop the Raffaellos into small pieces and preheat the oven to 160°C (fan oven). Place the butter and sugar in a bowl and cream with a mixer. Then stir in the egg and coconut milk. Add the vanilla extract, baking powder, desiccated coconut, chopped almonds, Raffaellos, and flour and continue stirring. Scoop a good teaspoon of dough and flatten it on a baking sheet lined with baking paper. Press an almond into the center of each cookie. Bake the cookies in the preheated oven for about 12 minutes until light golden brown, then let cool.
