Ingredients for 1 servings:

  • 2 large eggs
  • 100 g sugar
  • 135 g oil, neutral
  • 150 g yogurt
  • 250 g flour
  • 1 packet of baking powder
  • 100 g almond(s), peeled and finely ground
  • 50 g coconut flakes
  • 75 g white chocolate (chopped)
  • 18 pieces of confectionery (Raffaello)
  • 50 g coconut flakes
  • 2 tbsp milk or other liquid nB

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Preheat oven to 170°C (top/bottom heat). Mix together the eggs, sugar, oil, yogurt, flour, baking powder, almonds, coconut flakes, and chocolate. Reserve the remaining Raffaello and 50g of coconut flakes! The batter will be rather tough. If it seems too tough, add a splash of milk, a little more yogurt, or another liquid. Divide the batter among 18 muffin cases and press 1 Raffaello deep into the center of each. Only the top should be visible. Sprinkle the muffins with the remaining 50g of coconut flakes and bake for about 15-18 minutes, until golden brown on top. Tip: The flavor can be varied by adding a few ingredients. Suitable yogurts include natural yogurt, flavored yogurt (e.g., coconut, lemon, passion fruit, pineapple, etc.), and vegan coconut yogurt. Instead of plain white chocolate, you can also use white coconut-flavored chocolate or Raffaello chocolate. The ratio of almonds to coconut flakes can also be adjusted. The important thing is that the total is 150 g.
