Ingredients for 1 servings:
- 6 eggs
- 250 g sugar
- 2 packets of vanilla sugar
- 150 ml lemonade
- 250 ml sunflower oil
- 420 g flour
- 1 packet of baking powder
- ½ bottle of vanilla flavoring
- 2 points food coloring, 6 different colors
- 100 g icing sugar, for the glaze
- some lemon juice
Instructions
Working time approx. 45 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 45 minutes
Preheat the oven to 170°C fan/convection oven. Briefly beat the sugar and eggs until frothy. Add the vanilla sugar, lemonade, oil, flour, baking powder, and vanilla essence and stir until the mixture is smooth. Divide the batter equally into 6 bowls and color it in the 6 colors of the rainbow with food coloring. Grease a 26cm or 28cm springform pan. To create the rainbow cake, first place a dollop of one color in the center of the springform pan using about 1 tablespoon. Place a dollop of the next color in the center of the dollop and continue until there is no more batter left. It looks best when you follow the colors of the rainbow in the order of blue, green, yellow, orange, red, and purple. Bake at 170°C fan/convection oven for 50-60 minutes and check with a skewer to see if the cake is done. Let the cake cool. Mix the powdered sugar and a little lemon juice together and glaze the cake. Tip: To bake a whole tray of rainbow cake, you’ll need to double the ingredients and make two or more dollops to ensure the batter spreads evenly over the entire tray.
