Vegan brownies with bananas and chocolate sauce

Ingredients for 1 servings:

  • 250 g almonds, ground
  • 270 g dates (Medjool)
  • 120 g cocoa powder
  • 100 ml water
  • 1 banana(s)
  • 20 g almond sticks
  • 30 cl soy milk (soy drink)
  • Mint for decoration

Instructions

Working time approx. 20 minutes; Rest time approx. 45 minutes; Total time approx. 1 hour 5 minutes

Puree 250g of dates with the water using a hand blender or a blender. Mix the ground almonds with 100g of cocoa powder. Mix the slivered almonds and the almond-cocoa mixture with the date sauce. Grease a baking dish with a little margarine and spread the mixture evenly. Place the brownies in the freezer for 30 to 45 minutes. Meanwhile, prepare the chocolate sauce by blending 20g of dates with the soy milk and mixing with the remaining cocoa powder. Sift everything through a sieve. Peel and slice the banana. Remove the brownies from the freezer and arrange brownie pieces and banana slices alternately on a plate, garnishing with chocolate sauce and a mint leaf.
