Ingredients for 1 servings:
- 125 g butter
- 75 g sugar cane granules (dried sugar cane juice from a health food store or organic food store)
- 2 egg yolks
- 200 g spelt (or wholemeal spelt flour)
- 1 pinch of salt
- ¼ tsp lemon zest
- 50 g raisins
Instructions

Wholemeal biscuits – enough for about 35 biscuits
Soften the butter. Grind the spelt into fine flour. Cream the butter, egg yolk, and sugar granules until fluffy. Combine the flour with salt and lemon zest and add to the butter mixture. Add the raisins and knead everything into a dough. Form the dough into rolls. Cut the rolls into 1/2 cm thick slices, place them on a baking sheet lined with baking paper, and press down lightly. Bake in a preheated oven at 180°C for approximately 12-15 minutes.
