Ramen with minced meat and pak choi

Ingredients for 4 servings:

  • 2 packs of ramen noodles (approx. 250 g)
  • 500 ml soy milk (soy drink)
  • 400 ml chicken stock
  • 1 spring onion(s)
  • 1 tbsp peanut butter
  • 1 piece(s) ginger, chopped
  • 2 garlic cloves, chopped
  • 250 g minced meat or vegan substitute
  • 1 pak choi
  • some sesame oil
  • 2 eggs
  • 1 tbsp curry paste, red, or chili paste
  • 3 tbsp soy sauce

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour

Grease a pan with sesame oil and fry the minced meat. After about five minutes, add the chopped garlic and ginger and stir in the curry paste. For the soup base, combine the chicken stock and soy milk and bring to a boil. Add the peanut butter and two tablespoons of soy sauce. Meanwhile, blanch the bok choy in gently boiling water with the lid on for about five minutes. Cook the eggs for about six minutes. Cook the ramen noodles according to the package instructions and arrange them in bowls along with the soup, minced meat, bok choy, and eggs. Serve with finely chopped spring onion and the remaining soy sauce.
