Ingredients for 4 servings:
- 250 g fennel
- 150 g lamb’s lettuce
- 1 large apple
- 1 cup sour cream
- 2 tbsp fruit vinegar
- 1 tsp honey or agave syrup
- 1 pinch of salt
- n. B. Pfeffer
- 1 tsp mustard, medium hot
- 1 tsp soy sauce
- n. B. Fennel greens, chopped

Lamb’s lettuce with fennel
For the salad dressing, whisk the sour cream, fruit vinegar, and the listed seasonings until smooth. Wash the fennel, trim the stalks, halve, and finely slice. Wash the lamb’s lettuce thoroughly, and dice the apples. Arrange the fennel on a plate, top with the lamb’s lettuce, pour the salad dressing over it, scatter the apples on top, and garnish with fennel leaves. For the vinegar, I like to use a mild fruit vinegar or balsamic vinegar.
